Can anyone shed some light on how I might go about this? Have a broadband link that allows me to listen to the radio on the computer and would like the ability to record some of the shows as MP3's or AAC format files for listening later.

I use Total Recorder Pro. It's very good and lets you save the recording as MP3 or WAV.

I use Soundforge - record it as a .wav then encode to MP3. There's probably a bunch of programs that'll do similar stuff.

Used to work around Hastings/Eastbourne/Uckfield, but I'm a Brightonian

Is there any way to record it straight from the data stream? All the ones i've tried need to actually record in 'real time'.
