C63 AMG Cooling Issue?

Hi all.
Can anyone help with a slight issue I am having?
My C63 flashed up a check engine light and my code reader showed it was a cooling/thermostat issue.
The can ran fine and seemed to warm up ok with my normal commute, but driving to Leicester from Peterborough, I noticed that the car struggled to get upto temperature.
I purchased a new thermostat from Mercedes this week and thought I would get a specialist to replace it, but the day I got it, my wife called me to say the fan was stuck on from cold for her drive to work, 10 hours later she left work and it was on again! Car showed 90deg water and 40deg oil when I took it out for a test drive once home.
As I drove it with the fan constantly on the temps creeped up slowly, then, all of a sudden, the water temp dropped like stone to 30deg, the fan switched off and the car began to warm up properly. By the time I got home, the car was at normal operating temps and the fan was off! Although the light is still on, the car has been fine since!
Any ideas on what it could be?
