I find R129 seats pretty comfortable TBH, I had a Citroen BX that had fantastic seats but I can't think of anything much better. (for me anyway, I do suffer on long trips so tried loads of options) Maybe an upholsterer can help.
I can understand something more lightweight, they are heavy. I'm guessing the extra strength so they can house/support the seat belts doesn't help. I think the seat belt thing will be the biggest hurdle, if not contained in the seat you'll have to fabricate mounts. To get them high enough (ideally above shoulder height) a roll cage would help but rather negates the weight advantage.

There's a guy who posts in the r129 forum on Benzworld.org who has fitted lightweight buckets to his impressively modified 129. His posting name is Tech Tune or something.
