This began airmatic with rear suspension slowly dropping overnight which suddenly bcame rear suspension at full height.
Foolishly I took it to a garage who changed the valve block, then pump, then RHS ride height sensor.
At this point I retrieved vehicle and plugged in my own OBD reader which said issue with LHS ride height sensor. This had rusted through and I replaced it when I also replaced the rear air springs with some new Aerosus springs.

The car is still not rising and it tells me that the voltage readings from the ride height sensor are out of range but doesnt tell me what the range should be.

The sensors do change voltage when the car is moved so they are working but I am not sure where to go from here?

I live in the middle of nowhere so really need my car so I would be grateful for any useful suggestions!

As it sounds like you have done a full firing of the parts canon, I'd suggest taking it to an independent MB specialist. They have the official mb diagnosis tools as well as the experience to know that x affects y. If you say where you are someone can recommend one near to you.

What is the voltage range of the old ride height sensors? If different then they're either wrong parts or there's a calibration (needing proper gear).
