GTV's, how many seats?

Head & legroom is the main problem for rear passengers. Headroom shouldn't be an issue for kids, though.
If the driver's 6ft plus then there's no legroom behind on that side.
Front passenger has loads of legroom, so can shuffle forward to provide more space in the back.
If the driver can cope with sliding forward a few inches to give the 2yo some legroom in their car seat, then you'll be ok.
I've had 2 adults in the back of mine, but they had to get very cosy and it was only for a couple of miles...
Wouldn't suggest it for long journeys, though!

Can I also ask about experiencs of getting a child seat in the back - are the seats big enough to hold one for a three year old? I have recently sold my 156 and miss it, so am looking to get a 3.0 GTV and it would make my life easier if I could get the child seat it.

I have recently purchased a group 1 car seat (up to 18kg/40lb) that is a secure fit in the back of the GTV - I guess that would still fit a 3yo.
A friend of my sister-in-law has a 4yo that happily goes in the back of a GTV. Not sure if that's using a full-on seat or a booster, though.
The real issue is boot space (only 100 litres with the space-saver spare in place and only 150 litres with it removed) you'll be leaving the pushchair at home unless you can get a teeny tiny one (like the smaller Maclarens)!
{edited to add:} Of course, if you already have a car seat for your 3yo and don't want to buy another, you may find that it doesn't fit too well / at all. You need one with a fairly narrow base to fit into the seats (such as the Brittax Eclipse we ended up with).

OK - BabyV6 has now been in the back of the GTV. No problems at all (apart from it being a bit fiddly to get at the belt when mounting the seat).
Got a Maclaren buggy and it slots into the boot quite happily with the spare wheel in place, which was a pleasant suprise!
