My mate recently got done for 35 in a 30. Named herself as the driver, paid the fine and sent off the form, she had to send her plastic licence off in the post to some random place in Southend. 5 weeks later the licence has been returned with nothing apparently changed on it, just came sellotaped to the same form that was sent off, form has been stamped with 'Processed'.

So why did they need to see the physical licence? Also nothing to confirm any points have been added, surely there should be an official letter stating the points that have been added and the relevant dates concerned? Also maybe advising the driver to inform their insurance etc?

Because seeing the licence confirms the identity of the person admitting guilt.
Without it, anyone else in the house could sign the form to make their housemate guilty and they would never know.

(I realise that even seeing the licence is not 100% foolproof)

Yes good point. Although in this case she is registered keeper and they can easily access her licence details. Just seems a bit silly posting and then return posting the licence, it took some time to come back, she was worried it had gone missing.

Police forces require sight of your driving licence.

However, the court doesn’t - including cases dealt with via the Single Justice Procedure.

Yes this was Met Police. So it's just procedure. I wonder how many go missing. The process just seems a bit dated, not able to do online, hand written forms, same hand written form returned with a stamp.

What about my other point, does anyone know if she'll receive an official letter telling her she now has 3 points and the dates that they run for etc?

Just get her to go Online and do a licence check, the points validity will run from the date of the offence, any other date including when they appear on her licence is irrelevant
