I love fresh chillies but am not keen on the pissing-up-the-wall sauces.
I'm very keen on Reggae-reggae jerk/bbq sauce at the moment, nice and hot if used like brown/tomato or meat sauce with a nice flavour of its own too. Not sure if you want it to add to cooked dishes, I always use fresh in those cases, scotch bonnet being my preference, just a little if you want a nice flavour without too much heat or lots if you want it very hot.
