Ive bought 2lb of good quaity mince from a farm shop today and I fancy making a chilli from scratch as Ive never done it before.

Im sure I have seen some recipies on here before but a quick search didnt bring anything up, so, what have you got for me guys??

I like it hot but the wife doesnt so medium heat will be best I think.

Whichever recipe you choose, I'd recommend getting the mince up to room temperature, drying it off with kitchen towels, then browning it in a block: browning meat is where the flavour is.

Don't worry about cooking it through. The raw bits in the middle add 'body' to the sauce.

Highly recommended! I've made a ton of chili in my time and very few come close. I've tweaked the spice mix and doubled up the steak and if it were my last meal I'd die a happy chap!
