Coffee - Why so difficult....

Call me working class, but coffee is a tea spoon of Gold Blend (or similar), splash of milk and boiling water. Simple.
So why cannot I not get this anywhere anymore. All the "latte, flat white, long black, short black" lark is driving me insane!
Yes I can order an Americano but then nobody can fathom why I may want a bit of milk.
Minor gripe, but finding it occuring more and more regularly.
What else do you find that should be simple that isn't.

You just need to ask for a filter or brewed coffee. In starbucks, particularly, it's usually very tasty (their tribute blend is usually on at the moment) and they can normally hand it to you at the till, rather than having to wait at the end - which is helpful when they are busy
And don't get me started on you, Sir. Well, if you go to a coffee shop, it's like going to a chocolatiers, and asking for a kitkat. Go to a greasy spoon, or whatever, and you'll get the coffee you want. You can get the coffee you want from a coffee shop as well, but the ones I go to let you add your own milk.

The Swedish blood in me requires me to drink inordinately strong, black filter coffee, and instant coffee tastes crap without milk. (though I will drink cappuccinos provided they do not contain a gallon of milk)
However I agree with OP to an extent that there is a little too much BS coffee around...

I'd happily drink "proper" coffee all the time, just resorting to instant when at work

Weirdos. Just get yourself a cafetiere and keep a bag of ground coffee in the fridge, or get yourself a cheap stovetop espresso maker.

It is a bit ridiculous ordering in a Starbucks (personally I steer clear) but coffee these days is like wine and beer, there are lots of options for styles and flavours to cover the range of personal tastes.
But overall an espresso-based coffee will be stronger in flavours and caffeine.
