As some of you know I have been mulling over opening a restaurant for nearly a year as my redundancy looms, now in a couple of weeks.

We looked at tens of places, some good, some bad, some cheap and some expensive. Everything from beach cafes to 100+ cover fine dining. All the time the dream of an intimate French influenced brasserie style restaurant at the top of the list.

After several months of looking something came up in my old home town. Lovely place right on the harbour. Knowing that the summer tourist market wouldn’t stand an authentic brasserie the intention was to revert back to French influenced cuisine and target the family market throughout the summer. Then reduce the opening and offer a more up market menu for the locals in the winter. Everything checked out and we were ready to go.

Then I got the call…

The place of my dreams had just come on the market. An authentic brasserie serving near fine dining with a new head chef who aspires to many rosettes if not a star.

It’s not without issues and needs some proper investment but hopefully it will be mine in 6 weeks. Just need to get the planners on side for the new kitchen!
