Yup - fold is standard, and yup - through load is for skis (mine doesn't have it specced).

They dont in my convertible, but there is a hole (plated over in mine) that could be the ski option you mention?

Yup, same here. It's not with me at the moment so just going from memory, but I think the plate in the boot has a speaker built in to it or something? Still hinges out and, as above, it is a ski hatch. Or a really long french stick.

2 or 3 seatbelts in the back? (Coupe)

There are 3 belts in the back; the centre one is only a lap belt. I think it was an extra cost option for a third three point belt.
