I have a silverside beef joint that's been in the freezer for a while and thought I'd cook it for friends tomorrow night. I rarely cook beef (tend to do a lot of pork) so not really sure what to go for.

Anyone have any interesting methods or recipes to give it some flavour?

Probably have it with roast potatoes and standard mix of steamed veg etc. smile

Cheers

How about diceing it up and make a goulash.
Added with some mash, should make plenty and be quite filling.

Or just a simple roast as you mentioned.

Pot roast it in stock/beer/wine with a selection of root veg?

Find the biggest (oven proof) pot you have.

Apart from the beef you'll need;

2 onions
1/2 bottle red wine
2 tins of chopped toms
6 good quality Italian/pork sausages, cut in half
Rack of pork ribs, cut into 2 or 3 rib sections
a good bunch of basil, ripped in half

Cut the beef into inch chucks, and brown that with the other meat in olive oil

Soften the onions in another pan, and add along with the wine.

Reduce a little, and the tomatoes, and the basil, with salt and pepper.

Bring to a simmer, and put in the oven for 5 or so hours, nice and low.

When ready, cook some fusilli or other pasta, and remove the bones from the dish, and combine the two.

Eat with good red wine.

Gotta love pistonheads smile

So many good ideas, the tricky bit is choosing one.

Think wellington might be a tad much for me tomorrow (birthday today so need something fairly hangover proof - i.e. simple).

Nat H - that sounds awesome though not sure I can be bothered, or will have time, to get any more meat.

Pot roast is probably the way forward though, with lots of herbs, onion, red wine etc. Somethign rich and tasty smile

Wellington only works with fillet really but as an idea for another time you could make Bresaola (thats next on my todo list).
