the donkey sanctuary is a great place to waste an afternoon and there is a nudist beach at weston mouth if that makes it acceptabel to the PH masses!
I like Lyme (was down for the fossil festival two weeks ago), but never there long enough to do much exploring, usually stretching to a long weekend at most.
But I can tell you that Lal Qilla is a pretty good byo Indian restaurant, and Antonio's Trattoria is a very welcoming place that serves lovely food(not open sundays)with a rather nice wine list.

It depends what sort of road you want.
Mildly engaging, the B3180 between Daisymount on the A30 and Exmouth offers a mildly exciting drive if caught when empty. Nice views when you get out onto woodbury common.
The coast road between Weymouth and Bridport is good, but again, catching it without any caravans/tractors/hay lorrys is hard at this time of the year. Plus police in Dorset like their speed guns.
If you want views, then, just look around really. You're in one of the more beautiful parts of the country.
Ohh, and if you want to look for it, as it's near where you're staying from the sounds of it, there's an abandoned viaduct between Rouson and Lyme Regis down the valley into Uplyme. Access is easy from the east side.

The viaduct - it's one of the very few unreinforced concrete bridges, which is why it has a traditional arch shape but is very slender.

They put the cute friendly ones in the middle area, but in various outer fields you find some really heartstring-tugging groups, like the 'all blind donkey field', where they all wear little padded helmets so they don't hurt themselves bumping into stuff.

Pecorama is quite good if you have any interest in trains or have kids, it's model railways. Exmouth is great on a sunny day, massive sandy beaches, but otherwise not worth the journey.
It's worth coming down the a30 further than you need to, turning off for Exmouth, across the common to budleigh salterton, and back along the a3052 to beer, all good roads. Well worth getting up in the early hours to enjoy without the congestion.
