Was wondering if a similar roof design concept for a Replica Seven chassis would pass IVA in the UK ?

With a roof like that you would need a windscreen and most likely side windows.
For SVA you could likely get away with saying you don't intend to have a screen but things have changed for IVA. You can't now 'leave things off' the inspector will just say that the design intent was for it to have the screen so he would want to see it....along with it's ECE marking, wipers, washers, no sharp edges etc.

Now, the thing is, while everything Steve says are valid issues, I would say that there isn't really anything that you couldn't make work for IVA. (Might take a bit of thought ... )
Assuming that a 7 type screen would work (I don't see why it wouldn't) you could use a Westfield type (I assume others do this too) heated E marked screen and mount the wipers, wiper motor and washers on the tilting scuttle section. You'd have to be careful with the sharp edges but I wouldn't see that as a major issue.
You could also make up a solid, removable rear section (with heated rear screen?) for the roof panel to land on maybe using the roll bar as a support.
