I'm getting a garden office that has an odd (funky) shaped window - it's too weird a shape for normal blinds so is there something i could put on it so I can see out but no one can see in (most films seem to stop working at night....which is when i want prying eyes to not be able to see the IT gear in there)

How about shutters ?

The problem you've got is that one way glass works on the principle that you can't see in from the more brightly lit side - it's not really one way, it's just tinted and mirrored on one side so that the reflected light drowns out the transmitted light.
