Finally overcame my oil pressure problem today and when I got the timing right she fired straight up, rattled for a bit and quietened down. Just been for a blast - errm test drive and its great, put a smile back on my face.
Just a big thankyou to everyone that chipped in some advice.

Glad this is all sorted. You don't actually mention what the cause was in the end. I am assuming that it was the oil pump itself?

I also find it gratifying that someone is prepared to get their hands dirty in the engine and sort a problem out themselves.

Yes, it was the oil pump, I replaced the entire pump housing except for the two gears, which is kind of strange because theres not much that can go wrong with the housing really! A new relief valve and I put an uprated spring in to increase the pressure slightly.
Then I completely lost the timing trying to drive the oil pump, so some helpful commments on this site set me straight again - cheers

I don't want to sound too cocky but it actually runs better now than when it came back from it's last service!!! and it only took me 4 months to do!
