Had a 'quieter' exhaust fitted which included a middle silencer. This not only makes it quite a lot quieter but it also joins the banks together (have lost the race car 'spit' from each bank)...

However, I can just about live with that, but I miss the pops and bangs...Is there a quiet system out there that keeps the pops and bangs?

I'm going to try decatting first though..

Undo the exhaust manifolds at the head, enough so you have good air leak and it will pop and bang a treat!

Get rid of the silencer that joins the 2 'banks'. That is the last thing you should do with an AJPV8, it's essentially 2 separate 4 cylinder engines, and they work best when kept separate.

Then the car becomes far too loud, and the stock silencer just sounds st! I know a lot of people run linked decats, so joining shouldn't be a huge issue?

Well that is a matter of opinion. A lot of people, me incuded, think the Standard back box with de-cats gives a great sound. It isn't any noisier than the standard set up, it just gives a louder and angrier bark when you floor it.

The exhaust system on a Flat plane crank engine should NOT be linked. The linked de-cats were discovered by accident, in theory they should not work, but they do, however the positioning of them is important.

I've got the quiet ACT system with middle silenced pipes, I get pops, bangs and flames ok.
You need to get some fuel into the exhaust then back it off. Try second or third gear, large throttle then let it back off through 4K revs.
Cats out will help.
