Urgent wood BBQ advice please!

In just under an hour I'll be feeding about 20 kids and adults. Hopefully. We're in a wood and the BBQ is set up and waiting, only trouble is it's wood fuel and I'm used to charcoal.

Any tips? Cook over flame or let it die down to embers first?

Embers. Flames will burn the food, exactly the same as charcoal.
