Last minute 2/3 night break in the sun - ideas please

I need some ideas/recommendations for a relaxing 2 or 3 night break in the sun, no more than a couple of hours from Luton or Stansted (so Easyjet style flight destinations), a nice quiet (but good) hotel, decent beach and or pool and not a lot of travel time from the airport. From that we'd likely be looking at Spain or possibly Italy but where would you recommend? I'm in for a day op on Tuesday 26th July, so would want to go away Wednesday morning and come back either late Friday or early Saturday. (BiLs 40th birthday party Saturday and I'm unfortunately not allowed to miss it).

How about Portugal? Weather will be good, theres a lot of quiet hotels and resorts.

Lyanair to Toulon/Hyeres (1h hour 45 min) . Nice hotel in Hyeres on the beach. Day trip to Porquelles on ferry.
