The best ever home made chips

I was frying squid rings the other night and my wife had kindly left me a jacket potato to crisp up in the oven that she had cooked in the microwave.
Bugger that, i thought, and quickly seized the opportunity to chop it, skin on, in to chips. I fried it until it was golden and crisp, added maldon and vinegar in plentiful amounts and set to devouring what was honestly the best plate of chips ever.
Recipe:
Big skin on spuds such as King Edward or Maris Piper, microwaved as though you're doing a cheat's jacket. You can even cut it in half to help further dry the interior during the zapping process.
When they're soft all the way through, cut them in to chips and plunge in to hot oil. They take a while. Probably ten minutes.
