So I recently tryed my hand at pickling with a recipe I found for pink pickled eggs.

http://julesfood.blogspot.com/2010/08/pickled-eggs... see here.

Interesting concept they where too, didn't come out quite so pink as the picture though. frown The white went a much darker colour almost the same as the eggs shell I had peeled, this made it quite emusing to watch peoples reactions as they bite into it.

So I thought what else would be good to pickle???? Other than your normal eggs, gherkins and onions.

Thought's please.

Regards

Pickling the cucumber glut at the moment - brine/vinegar with dill. It's not clear to me whether the recipe I'm using is expected to ferment or not (many recipes use only brine with all the acidity coming from fermentation). My recipe says keep for three weeks before eating, and the first lot would be ready today if I hadn't already eaten them all... Must show more restraint with this batch!

out here (Ukraine) pickled cucumber is very popular - the locals love it when drinking vodka

other things they pickle include tomatoes and mushrooms

Like the idea of this one.

I made some chicken stock and stuck it in the freezer to make some risotto soon. idea

That looks top otolith... I wonder if it could be incorporated into BVD's lemon suggestion? killing to birds with one stone?
