Why do they sound so good?

Depends on crank arrangement. Fezzas, Lotus and the AJP V8's all have a flat crank so they sound like 8 wasps farting until they come on song. The AJP is a bit odd in that it is not a 90 degree vee - forget the exact angle but someone here will know.
Rover V8 is a cross plane crank so sounds more meaty.
Either way with TVR's "They all do that sir"

even with the old V6 motors?
cuz they sound luverly (as mentioned in evo they do sound rather like a V8)

Probably a comparison between old un-catted V6's and newer V8's with cats.
A high capacity V8 will never have any equal for sounds. One of the reasons the Rover V8 sounds so good even in low capacities (3.5 or 4.0) is due to the near-pyramidical motion of the piston motions. Why this translates to noise I don't know.
There, I've even lost myself. Heard it said somewhere and it sounds good to me - as does a decent Rover V8

edited - I know pistons can't move that way but the way the crank pin moves is a sort of pyramid.

I think that the rotational motion of the crank "pin" or Journal describes a circle, having a fixed point of rotation (the journal bearing centre line) limits this to the said circular motion. Now for a pyramidic path of rotation that sounds nigh on impossible unless you have a wankel (hurriedly checks spelling)

well i don't know about Tiv's but if you take le mans for example two cars with V8's the panoz and the audi, both sound hugely different (admittedly the audi has turbo's) but the panoz sounds like its ripping through the air and that engine is real old school 2 valves per cylinder and pushrods, where as the audi uses all mod cons (4 valves, direct injection etc) and sounds good but very smooth.
