so have been growing corriander and now its gone to seed - has lots of green "pepper corn" type seeds. crushed one and it smells amazing.

question - can i pick and store them in any way - ie are they like pepper corns or do they have to dry out or something? are they ok to eat? should i freeze them or store in a jar?

dont want to waste them!

They get dried and are used as a spice...

I expect so, yes, oherwise the moisture content will encourage mould. You can dry them on a baking tray in a very low oven.

probably best to let them ripen and dry on the plant
