Does anyone have any good recipes. I have had it a few times in restaurants recently and has varied massively from being overdone in terms of additions to the steak itself to just being steak and herbs, which wasn't great. I have had a look at recipes online, but i was wondering if the PH chefs had any special ideas / recipes?

The traditional Polish tartare is served with an raw egg yolk on top of the beef. This is served with finely diced cornichons and onions which you then mix with the beef and egg yolk. Seasoned with salt & pepper and olive oil.

There is no need for a proper recipe, just add the bits in the proportions you like, which may take some trial and error

Egg yoke
Chopped gerkins
Chopped capers
Chopped parsley
Tabasco
Worcestershire sauce
Salt
Pepper

The only KEY thing is that the meat must be chopped by hand, not minced (for texture, not because of the 'evil germs')

Many thanks for the replies guys. I will take photos when i make this and post them up. I have read a few places that use cuts other than Fillet. Any experience with this?

As above really but you must use fillet steak. I would go to the butchers if possible as whats in the supermartket ia never as good.

Anthony Bourdain's recipe is all of the above plus dijon, ketchup, anchovy fillets, onion /shallots and cognac and uses sirloin.

It's the sixth outing of our steak tartare club tomorrow. The most expensive was the worst and the best was mixed table-side which added a bit of theatre and they didn't even have it on the menu, though I did ask in advance.

yes, those other ingredients sound good. I've not tried anchovy, but it may work as long as it doesn't make it fishy

Suppose you could experiment with Gentlemen's Relish (Paterum Peperum)?

Steak Tartare is indeed food of the gods.

The most memorable I have ever was served on a bed of lamb's lettuce - really set the usual ingredients off very nicely indeed.

And the egg yolk is obligatory...!
