I'm currently in the process of buying a new house, which has light oak coloured engineered wood flooring in most of the downstairs. Not a huge fan of this colour and would really like to go darker.

Is this possible i.e. have it all sanded and stained/varnished a darker shade? And is this something any decent carpenter/handyman will be able to do??

You can certainly stain wood; you just get some stain and wipe it on with a rag. But do a test first as the colour is rarely like what it says on the tin. Check the drying time though and also compatibility with intended varnish - if you get it wrong it won't dry properly.
