'Northern' Pies

Being an exiled Mancunian living in Wales, I really struggle to find a good pie around here.
We have our local suppliers, and the locals love them - Peters, Clarks, etc.
But they're not 'proper' pies to me. Far too much poncey 'puff' pastry involved for my liking.
Anyway, I was up in the Peak District for a bit of walking this week and came back via Ashton Under Lyne market - giving me the opportunity to buy some proper pies.
They were fresh from this lot:

Just had the potato and meat tonight - and have steak, cheese & onion, pork and steak pudding in the freezer
What is it that's so special about a proper 'northern' pie - and why can't you buy them elsewhere in the UK?
