We were going to go to Paris and leave our 2 young kids with a grandparent but the boss (wife) has decided she cannot leave the kids for more than one night and doesnt want to be too far away.

Therefore our options are:
1-2 hours maximum drive from Manchester
Nice Hotel (ideally with pool)
Decent Restaraunt is crucial (Ideally in the hotel or very close by)

(really liked the majesski hotel in Reading as food looks very good & Waterside Inn, Bray but both too far)

anyone have any suggestions?

How about the Lake District ?

The lake view / deluxe rooms at Armathwaite Hall look pretty good..

Looks perfect, but slight downside - no jeans allowed for dinner (dress smart, but no trousers!)

-but it did tick all the boxes I'd specified

even Winner likes it.
looks superb but no pool (but it is swaying me! £280 for room for 2, breakfast and evening meal michellin star is not bad at all!)

The hotel pool can be quite bracing at this time of year though.
