Basically the MOT station will look for the same things as any other vehicle.
The only difference is that being a kit car some testers will look that bit closer in the hope of giving a fail.
In case they ask (which they can do) make sure that the V5 is correct.
It should say (I think I have put more info on the technical site www.joctechnical.org.uk )Make JAGO Type/model 2 AXLE RIGID BODY PICKUP (if just front seats) or SALON (if rear seats fitted). Ford jeep is not acceptable nor is Ford Escort. If yours says that even if the MOT place don't ask for it get it sorted before you are forced to do an SVA.

The old rule of what aint there can not be tested is still true but only on none essential items like a spare wheel and not things such as a demister system(if no roof then you may get by on that one), mirrors (should ideally have one on each side and the rear view mirror on the screen), washers, wipers etc.
The seats should be firmly fixed to the floor using large spreader plates and not repair washers. The seats can not tip at the base (ie like some of the old cars where instead of the back being adjustable/ tip forward the whole seat tipped at a hinged point at the front of the frame.
Naturally the seat belts need to be in good condition and firmly fixed.

As I said above the rest is basically anything a production car needs to have working/in good order to be classed as road worthy.
