Quickish hatched coupe that manages 40mpg?

So I currently have a family barge of a Primera. It's a P12 Estate. 1.8l 16v. Really nice car in and out but I'm lusting for something more sporty and fun.
I want a coupe but really need something with 4 usable seats and a hatched boot as the dogs might occasionally be in there. The Primera gets (on average) 39mpg continuously. I get roughly 420-440 miles per tank. I don't want to settle for less than this.
Is there a hatched coupe out there that has 4 usable seats and can get 40mpg on average?
I've been looking at Hyundai Coupe Gen 3s. Really like them and seem ideal. Official figures seem to say high 30s on average (high 40s extra urban) for the 2.0l which is promising although always to be taken with a pinch of salt. I've been reading an owners forum and people seem to only be managing from 160-300 miles to a tank, although I imagine a lot will be pushed hard. I drive the primera like a saint and still only manage a 39mpg average.
Budget is around 2-2.5k
Any suggestions?
PS. Also must be good on insurance. No point suggesting anything with a high insurance group. The primera is 9. The Hyundai is 10. Don't really want to go for anything really expensive.

The Hyundai isn't really quick to be fair, even the 2.7 is a underpowered,
The 2litre Coupe is slower than my 1.8 Corrado. The back seats in a gen3 aren't usable for anyone with a head. On the tailgate there are even warnings about smashing people in the head with the tailgate glass. Boot is quite large albeit shallow.
My opinion? Get a corrado, and get a PD150 conversion, derv economy, 90's boxy coupe/hatch. (Might be biased on the choice mind...) and if everyone in the car is 6ft or thereabouts people in the back are compromised for leg room, but otherwise people have commented it's quite comfy!

Have just been looking at these. Seem quite cramped in the cabin though, especially the back. The Hyundai looks bigger, although as said above, headroom might be a problem? Although I expect it would be in the Celica too.BMW Compact, had an e36 variant before and loved it. Was only the 316 though. Would happily have one again or the newer style one too. One to look at.
Puma, well I like the look of them but don't think I could live with the interior. Probably a bit too small for what I need really anyway.
Also, I don't need that much room in the back, just 2 proper rear seats. Doesn't need masses of leg room as it's only for my little girls seat and maybe another passenger once in a while.

It depends on whether you're looking at a Gen6 or 7 - I'd assume 7 based on the other cars mentioned.
I'd treat the 7 as a 2 seater with 'emergency' rear seats. There is headroom in the rear but it's at a premium (taller friends had to ride with their heads sideways to fit ) and if you / front passenger is taller rear leg room will be limited also.
That said the gen 7 is surprisingly practical for a coupe, with a shallow but very long boot - with a bit of faffing I once managed to get a 2 meter radiator in mine, much to the bemusement at a bunch of (initially) mocking tradesman at a plumbing world store.
Edit: forgot to comment on the 40mpg. My Celica with general combined commuting / country lane driving got me about 37mpg on average. Not sure if that'll rule it out.

On a run my wife has managed to get over 40mph out of her Gen 3.5 2.0L Hyundai Coupe, but I struggle to get anywhere near that mainly because it handles so damn well that it encourages me to press on Rear seats are comfortable for short arses, tall adults won't like being there for very long due to lack of headroom, but there is a decent amount of legroom. It's not a particularly quick car, and probably one of the biggest annoyances for me is the "rev hanging" when you change gear at high RPM, but it seems quite a few modern cars do this
