My parents have just emptied their allotment of god knows how may carrots and parsnips. We now need to find something more interesting to with them than roasting or boiling as that becomes boring quickly. Any ideas or recipes welcome.

Curried parsnip soup is wonderful. Make loads and freeze it.

Soup as mentioned.

They will keep for ages (months) if stored properly, in straw or something in the shed or garage I think, I don't know ho to do it, just that it works!

curried parsnip soup
carrot and butter bean soup
Carrot and coriander soup
carrot and banana cake ...absolutely lush.

We have already done the carrot and corriander soup. The other recipes all sound interesting. I had totally forgotten about carrot cake. lick
