Are you good? Can you joint a chicken, fillet your own fish, bone out a lamb shoulder?

I try to do as much as I can and have built up the required knives to allow a good shot, but after watching this guy I may as well pack up and go home.

Pepin - a bloody genious!

Deboning a chicken is easy

i learnt by following this exact youtube vid over and over again

once you get the hang of it then you're away.

Oddly stuffing a chicken makes it go MUCH further- we bought a medium chicekn from the butches a while ago, and stuffed it, and we must have had 8 meals plus sandwiches for the two of us- got a bit bored of it in the end so the dog had the last bits of it biggrin

Awesome vid, however it shows how 'hands on' the process is, but yet how simple.

We Brits get arse-raped by butchers and caterers for anything ballotined because we're cissies about handling 'raw meat'.

Note how he wiped his hands on the tea towel though. I hope that was washed before being used for anything else... hurl

Spent Sunday morning deboning wood pigeon, stuffing and trussing them back into whole birds. Got it down to about 5 minutes a bird in the end. Fiddly little buggers!

He is a proper chef with a talent for orating his actions. I used to watch his TV shows back in the day before cooking programs turned into music videos filmed by myopic cameramen with Parkinson's.

His Omelette video is also on youtube and is a must see for anyone wanting to master them.

I made a point of teaching our apprentice how to do it so I don't have to do any more!

Google "Pigeon André Malraux" and you get the idea.

I gave it a go 2 weeks ago. Strangely satisfying and very filling if you fill the little bugger up.
