MGB GT, TVR S2, VW Corrado. All brilliant in their own way, all of which I've found myself nipping out on an errand and going on a much longer drive just because I was having fun.
In a different manner, I used to love driving about in my old E28 525, comfy interior and auto box actually made London driving bearable. It was the first car I've driven where I've actually enjoyed driving slowly! If you want to decrease your chances of being caught speeding without being frustrated I can thoroughly recommend one.

Purest fun car? That'd be my old Caterham I reckon. Felt like a four wheeled motorbike and the tweaked K-Series with the six speed close ratio 'box was such a racey combination.
I prefered the TVR S3 before that for general use, though. It wouldn't have seen which way the Caterham went on a twisty B-road, but it was still great fun with more in the way of comfort and practicality.
