Seville - hotel recommendations, restaurants and sights

I started a thread a couple of weeks ago

After looking at many of those great suggestions the boss decided the venue would be Seville.
I know nothing about Seville so I'm turning to you PH'ers to give me some recommendations about hotels, restaurants and must do things or must see places.
We'll be there just two nights and would prefer to be close to the main points of interest. What do you recommend?
