Don't eat them.

The brown one looks to me like Paxillus involutus (poisonous and has had the odd death attributed to it).

The white I think is Lyophyllum connatum (edibility unknown).

Coprinus comatus, or shaggy ink cap. Also known as the lawyer's wig.

These are edible and good when at the 'drumstick' stage, with all gills white. They're still edible after that, but disappear into a grey mush when cooking.

I'd fry them in butter with a bit of crushed garlic and serve on toast with some chopped dill or parsley.

Just to add with the Ink Caps, cook them soon after picking or you'll find out where the name comes from.

That's a shame.

Shaggy ink caps are good eating and moreover a very easy species to identify.

Many thanks Mobile Chicane, sometime soon I hope to come accross a mushroom that I CAN eat other than in a supermarket.

I think your best bet would be to go out with someone who can show you the species which are best to eat and absolutely unmistakeable.

Lots of these types of bods around due to the ever-increasing popularity of foraging.

Ya, I thought that, but here in Cork, Ireland I know of no one who knows. Only some hotels that have Mushroom Hunts but I'm off racing the weekends they are on. i live in hope !

If you do decide to eat the inkcaps, don't have a glass of wine (or any other alcohol) with the meal or for a few hours before or afterwards. They contain disulfiram which is the active constituent in the drug given to alcoholics to stop them drinking. The side effects can be most unpleasant though not fatal.

^^^ True of a lot of wild mushrooms, imho.

I have noticed that hangovers are a lot worse having eaten them. Antonio Carluccio recommends that you limit wild mushroom portions when serving alcohol.

(Or vice versa.)
