If I'd been sold a car by a dealer that was an ex-demonstrator with a multi-point inspection certificate that states 7000 miles but upon collection the odemeter reads over 8500 miles? What would you do?

Accept the car if there don't appear to be any major faults. That's probably what I'd do. There are two other options. Firstly you could ask the dealer to update the inspection and check it again. The risk is that they'll simply fill in a new certificate with the current details on it and just skip doing the real inspection. Second option is to pay for an AA or RAC inspection.

Get a reduction in the price to reflect the extra mileage? But I can't see it being much, and I most certainly don't see a court looking kindly upon it if you took it that far...

Surely you would have seen the car before you bought it so knew it had 8500 miles on it. So presumably your complaint is that the inspection was done 1500 miles earlier than when you purchased it.

If so, it doesn't seem unreasonable to ask the dealer to undertake another one now.
