Surely not good to hang a tonne of animal from it's legs like that, puts the ligaments and tendons under a lot of odd stress most likely. Why not some sort of sling so they can do it upright?

Sling underneath would crush internal organs, at a guess. Those legs are very tough. I guess it wasn't done without consultation!
