Skinless chicken breasts are a staple of my 'diet' and would like a few ideas of how best to brighten them up whilst remaining healthy.

This recipe for brined, grilled breasts sounds fairly interesting, though not terribly inspiring: click.

Cut into chunks, marinade, skewer and BBQ/grill.

Teriyaki marinade (for 750g meat):

125ml soy sauce
125ml mirin
1 clove crushed garlic
1 tsp powdered sugar
1 tsp ground ginger

Start eating thighs. A hell of a lot tastier and inordinately cheaper.

Coat them with lemon pepper or cajun seasoning (paprika, cayenne, black pepper, little bit of chilli, but should be easily found in the spice section of your local supermarket) about half an hour before you use them. Slice deeply into the thicker flesh to help them cook through a bit more evenly. Grill until cooked, serve with fresh veg. Very healthy, no fat involved.

keep slashing it to make it flat and wider, Lots of cheese and fresh basil leaves or some chilly powder or anything interesting really.
Roll it up, wrap bacon round it and whack in lots of cocktail sticks to keep it together.
oven bake for 45 mins with foil on top then a final blast with the grill on to make the bacon crispy.
mmmmm !

Have you tried it with just breasts? It's more for the speed and convenience - I appreciate a jointed chicken will be 'better', but I'm not willing to wait two hours for my dinner after a long day in the office.

Always do it with just breasts. Speed and convenience is the key to family life smile

It keeps well in the fridge for reheating too

Cut into chunks or leave as whole, marinate in LOTS of onions, some lemon juice, saffron, salt and peper. Leave overnight . Either grill or pan fry. This is basically Persian chicken kebab aka Jojeh kebab.

Well the onions are for flavour but you can always cook them if you want, the marinate itself is not very watery so most of is will be on the chicken.

Parcels.

Make a parcel/bag out of doubled-up foil. Put your chicken (whole, slices, or pieces) in. You can then put whatever you like with it: small chopped veg, some fluid (chinese-related, or wine, or water, or tomato passata, or similar), and flavourings (herbs, spices, whatever suits). Stick it in the oven for 30-40 minutes on a medium heat.

It's essentially stewing the chicken with the fluid, flavourings and veg, and it's both dead easy to do and really tasty as the chicken cooks in the sauce. It's also really quick and has minimal cleaning up to do, as you just chuck the foil away.
