OK have agreed to cook christmas lunch for the guys in my office- which is great.

But it will ALL have to be done in advance. Most of the menu has been set now, but need a starter. Rest of hte menu is chicken, leek and ham pie with mash, followed by crumble and/or chocolate marquise.

so what starter- must be really really easy to make tonight, be easily and quickly reheatable (or cookable) tomorrow, also a variety of things that people won't eat, including smoked salmon.

only thought so far was creamy garlic mushrooms on crunchy toast (i don't mean toast but i can't think of the right word at the moment)

Don't currently have either a blender or a food processor so can't make pate or great soup.

Stuffed Mushrooms

2 large mushrooms

1 garlic clove, peeled and crushed

1 roasted pepper from jar, cut into strips

4 slices of mozzarella

salt and freshly ground black pepper

drizzle olive oil

Preparation method
Preheat the oven to 220C/425F/Gas 7.

Place the mushrooms onto a non-stick baking tray.

Fill the mushrooms with the garlic, top with the pepper strips and arrange the mozzarella slices on top. Season with salt and freshly ground black pepper and drizzle with olive oil.

Roast in the oven for 8-10 minutes, or until the cheese is golden brown and bubbling. Serve.

Or get some breadcrumbs, bacon and cheese.

Fry off bacon top mushroom with bacon crumb and cheese and whack in the oven. Serve with some kind of chutney and salad

Red onion, thyme and goats cheese tart - roll out a sheet of puff pastry, pile it all on top, and sling into a hot oven until the pastry is cooked.

How about some smoked salmon with some kind of soft cheese rolled into it. Serve with small crunchy things.

You will want a light starter with the two other heavy courses.

Prawn Cocktail
Chilled Melon and fruit coulis
Soup (buy some tins of soup, empty into a pan and hide tins)
Buy some pate from a decent deli, waitrose or M&S and serve with oatcakes.

except 2 of them hate melon and parma ham

and prawn cocktail is out too!

might end up at waitrose for pate at this rate.

If your guests are truly picky.
Buy some chicken nuggets or make your own (not McDonalds) and serve 3 or 5 with a little rocket salad and a sweet chilli dip.
