Looking For Some Advice...

How you all doing? Been reading this forum for about a year and finally singed up 
Wondering if anyone can come up with any ideas or advice for me.
Looking at getting a new car in the next few months because am starting to get fed up with my MK4 Golf GTI and had it for 2 years and it's time for a change
Am doing about 15-20,000 miles a year just now and that's about 80% motorway,A and B road driving and the other 20% is town driving. And a currently averaging 36-37 MPG from this. Looking for my next car to be fun on the back roads but still be a good motorway cruiser. And still get the same average MPG +/- a few, over a tank when driven sensibly...
Looking to spend about £3000 but the very top of my budget is £4000, but don't really want to go as high as that trying to save for a mortgage just now...
Had a look around and the only car's I can thing of that meet what I want are:
Clio 1*2's
Ep3 type r
BMW e36 32* (not sure if I would get an average of 35MPG, but cheaper to buy...)
BMW e46 32* (not really seen a good condition one within my budget)
S3
LCR
Not bothered if it's a petrol or diesel either. Just want to know if anyone has got any suggestion that are a bit left field? Only problem is insurance! Am 22 in a few months and don't want anything to high on insurance.
