I have just discovered that an electric paint stripper makes fantasticly crispy chicken skin.

Insipired by the sous-vide thread the other week, I thought I'd have a go. Breasts stuffed with dijon, asparagus, mancego and smoked ham, sous-vide'd for 2 hours at 64C and finished with the paint stripper. Pretty bloody good, even if I do say so myself.

Had to read that twice...

I use my paint stripper to toast my cheese sarnoes at work! Takes ages but it melts the cheese well.

The key word there is 'electric'.
