In between services I need to top up the oil and the handbook recommends mobil 1 5w/50. I don't know what was used in the last service as I've just bought the car, all I know is that is was fully synthetic. Would it be detrimental in any way if I used the wrong grade, for example 0w/40?

If unsure, dump the lot and do an oil (and filter) change. Cheaper answer would be to phone the place that did the last service and ask what sort of oil they use.

I MAY GET SHOT DOWN HERE BUT I THINK AS LONG AS THE OIL YOU USE IS FULLY SYNTHETIC IT DOESN'T MATTER TOO MUCH WHAT THE GRADES ARE.MY TVR MANUAL RECOMMENDS USING MOBIL 1 0W/40, JOOLZ AT JOOSPEED USES A 5W/50 I THINK. BECAUSE THE 0W/40 IS THINNER THAN THE 5W/50 ALL THAT WILL HAPPEN IS THAT THE 5W/50 WILL IN EFFECT JUST GET DILUTED SLIGHTLY.SO YOU SHOULD BE PERFECTLY SAFE TOPPING UP WITH SLIGHTLY DIFFERENT GRADES AS LONG AS THEY ARE BOTH FULLY SYNTHETIC....

Slightly off topic - however, I got pulled at LHR on Friday evening for carrying 4l of Mobil1 through security ...

"It's combustable sir" ...

yeah - at high temperatures - you'll also find that the human body is combustable at those same high temperatures... for safety reasons - why don't we just keep passengers from boarding ...

Therefore - whatever you go for 0/40 5/50 ... just don't try to slip it passed LHR security x-ray ...

P.S. After letting that slip - I definitely didn't get my rasor and scissors back ...

Topcats run their race tuscans on semi-synthetic, so I'm not sure about that

IME you can pretty much mix oils as much as you like within reason.

I'm pretty sure mines is semi-synthetic aswell.

I got the garage to give me a 5 ltr tub when they serviced it, that should last till the next service. (Not even sure which grade it is)

The service book should have a stamp in it. Have you tried phoning the garage concerned and asking them what oil they use when servicing cerbera's.
