Was wondering if anyone had ideas of how to make a car smell nice and fresh - but not so that it will smell like a mini-cab! So far I've been putting those scented tumble dryer sheets under the front seats, but was wondering if anyone had any other ideas....

Are you trying to hide existing smell(s) or are you a self-conscious smelly smoker?
Just keeping it clean should keep it pretty much odourless.

Just leave some powerful smelling solvents in it overnight for that new car smell in the morning.

First, fog it, secondly clean it and keep doing so regularly. No need for any supplementary air fresheners, they just mask it for a while.

Mine smells of gearbox oil and 'gunk' engine degreasant. Not so good. Oh and there is an occasional whiff of hydrogen sulphide (rotten eggs) from the battery which fell over in the back; the acid ate quite a lot of carpet before I noticed.

Why doesn't your car smell nice and fresh? I'd be more concerned at resolving that.
