With the Brembos the handbrake calipers are separate from the main calipers and operated by cables attached to an electric motor. Disengage the handbrake by holding down the handbrake switch when you switch the engine off. This will slacken the cables and allow you to change the pads (no winding required). I haven't done this yet on my car, but will need to soon. Let me know how you get on.
