Best car, fun to pound ratio

So basically i'm looking at binning off my old 1.4 ibiza (which has been remarkable good for the past 3 years), for something a bit more exciting and that doesn't handle like a jelly (although it does put a smile on my face).
I'm really not sure what to get. My main stipulation is that insurance must be under £1k (i refuse to pay any more for a bit a paper!) - i'll be insuring/buying the car when i'm 21.
I do a LOT of mountain biking, so the more practical the better, saying that i'm looking to get insured on the parents mondeo. Will also be my daily driver and only car, although i can ride to work. 30mpg's would be nice to aim for.
I have a maximum budget of around 3k i recon, could stretch a little more. But i'd rather buy a shed to rag around, the cheaper the better. if it costs under 1k, i don't mind getting nothing back for it after a year, so long as i've had some fun.
Not really bothered about how it looks, function over form.
So far been looking at:
e36 328 coupe/touring - lovely straight 6 sound, cheap as chips, and cheap for bits from the scrappies
200sx s13 - don't seem to get as much for your money, but should be able to get one bike in being a hatch. Not as boaty at the e36 or s14.
200sx s14 - much prefer the s14a, but looking at the top end of the budget.
anyone want to impart their opinion. anything else i should think about looking at.
....i did do a quote on a noble m12 gtr (415 brake beasty) £30,000 car; was only £1400 for a year to insure, i think i'd rather buy a house though.

Re insuring a 328, i've just done a quick quote as if i'm 21 on moneysupermarket, and its coming out at £710; which is really rather reasonable, considering the ibiza on renewal in feb will be about £450. and that has a third of the power, is half the capacity and is FWD.
200sx's are around £850 to insure.
now 200's and 328's seem okay out of the box, they only thing is the way of putting power down, i.e. open diffs or pants/weak lsd. would it be worth getting a proper LSD?? (if i got a rwd car, which i on reflection i think i really want - ill probaly start doing the open drift champs, or at least go to a couple practice days)

i have also looked at rx's, i was surprised to see i could insure a twin turbo rx7 for under 1k, problem is getting a car which works for under 3k (though a mate just bagged a rough one albeit with a newly rebuilt engine for £1100, jammy git).
i could get a post 2000 rx8 231 for well within budget though, although i'm not sure i could stomach 18mpg on a run.
