There may be others who can tell you a specific combination that will work and what cable you need to join them.
If you get no answer then easier to get an electronic one and drive it off a magnet glued to the prop shaft flange. It is then very easy to adjust the speedo to read spot on or just over if you are then taking it for IVA.

I'm pretty sure that the speedo drive gear that slips into the gear box is available with different numbers of teeth, so that you can adjust the cable speed/wheel speed to give correct readings on the speedo. Somewhere there's a list of the different colour codes for the speedo drive gear.
At the moment I have all original Mk1 Escort cable, and dials.
How would I go about finding what suits it and what doesn't?
The cable is pretty grubby as it was built in 82', but other than that I dont really know what to look for?
Would it be fairly easy to convert to a digital dash? I dont want to spend mega money, but am open to ideas!

To convert to digital dash you would need to replace the cable driver at the gearbox end with a digital signal producer. The all you need is a wire to get the signal to the dash mounted digital speedo. Usually wih digital speedos you don't have to worry about the gear ratio at the signal driver (gearbox) end, as any correction can be done through the setup of the digital speedo, by no. of pulses per mile.

any typical car-speedo will work...as the ratio of the typical speedo is 1:1 (old analogue bike speedos could be differnt)... there are mainly 2 different types how the cable is connected, a screwed type and like a push/bayonet type.
if you source a speedo with a similar connector you even do not need to care about a new cable.
