I've always enjoyed baking, more so than I do 'cooking dinner'. I stopped baking so much about ten years ago, but have taken to it again recently, after taking on some Chicks 18 months ago eggs are plentiful and especially after receiving the most beautiful Artisan Kitchenaid Mixer for Christmas <3.

I have baking days where I make up Cakes, sometimes a Coffee & Walnut cake on my day off just so I can have a slice in the afternoon with a cup of coffee. I make biscuits and bread, Flapjacks for pack-ups, puddings and pastries. I make chutneys and Sausage Rolls, Tarts and Tartlets.

And thus I have more photo opportunities of home baked goods than I do 'dinner'.

Some recent ones (they're all iPhone photos so not awesome lighting/quality)

Spiced Cranberry, nutty, seeded Cookies

Chocolate & Ginger self saucing pudding

Feta Cheese & homemade Red Onion Chutney Tartlets

Cornflake Tarts

And tonight's Fudge Tart

And last week I made a quick cake for my Dad

So, post photos of your home baked goods please...

It's one of the simplest cupboard ingredient/cheap things to do. I can make this from my head but this gives a good idea

Pastry
6 oz plain flour
3oz butter
1 1/2 fl oz water

Filling
1/2 pint milk
3 oz sugar
4 oz butter
2 oz plain flour
1 teaspoon vanilla essence
1/2 oz grated chocolate

Make up pastry, line and grease 8 inch flan tin.
Bake blind for 15 minutes. Gas 5 ,185ºC
Pour 1/4 pint of milk into saucepan, add marg/butter and heat till nearly boiling. Blend the remainder of milk with the flour and beat to a smooth paste.
Add to the milk mixture. Then add the sugar and cook thoroughly (stir and stir and stir) until a thick smooth finish is obtained.
Add the vanilla essence and beat through. Pour in pastry case and leave to cool.
Decorate with the grated chocolate.

My attempt at flapjack the other day! came out more like a giant hobnob, thankfully I also like hobnobs so it was great! Pretty sure I know where I went wrong, needed more golden syrup and less time in the oven.

I love Tiffin. Looks good.

Last week's Tuesday Afternoon Tea cake

And Johnny's Thursday Birthday. Mojito Cake.

It's the first time I've made this and was pleased with how it turned out. In fact so were the 12 or so people who had a slice or two!

Johnny bought me some lovely baking books recently and amongst my usual Flapjacks and pies and usual cupcakes over the weekend I've baked Stilton and Walnut biscuits, Jasmin Tea Cupcakes, Red Velvet Cupcakes (both delicious and fed lots) and I invented a recipe for Rhubarb Scones which was very successful and welcomed by many.

Jasmin Tea Cupcake...

And this birthday cake for my sister
