Realistically how much should one expect to spend on the drawing up of decent (ie not instant/dodgy) wills for myself and the OH (we're not married, but long-term partners)?

If it is just a straight forward "Mirror Will" you would pay anything between £100 - £Whatever. If you require trusts or Lasting Power of Attorny it would add a lot more.
