Squirrel

I noticed the other week that our local butchers had squirrel for sale, along with other things rabbit/hare etc..and didn't think much of it,

yesterday whilst getting acab to Ascot, and making small talk with cabbie as you I mentioned this and good old cabbie with his fountain of knowledge (better the google ) proceeds to tell me it tastes like chicken.... my response was that anything that isn't chicken, pig or cow seems to get tagged "tastes like chicken" .... question does it taste like chicken ?? and what to cook it with ??

Tastes more like rabbit than chicken.

I had it deep-fried in a southern-style coating in a pub in Sussex. Delicious.

A tandoori treatment would also work I think.

Definitely more like rabbit - I've had a few squirrel pies and they were great - not so many of the little blighters in my back garden now so I am waiting for the spring to try a squizzer curry!

Friends when I was a kid didn't believe me when I said my mother had a recipe for squirrel in white wine sauce - Canadian cook book, given that they are road kill nuts, didn't surprise me!

Only the back legs and 'saddle' have enough meat on to be worth bothering with, imho.

Personally I'd slow-cook these, take the meat off, and put it in a pie.

With a cute little squirrel as a pie funnel.

I believe some restaurants list squirrel as Tree Rabbit on their menus. This is
to stop people thinking it is Tufty on their plates.
Heard this on a River Cottage programme a few years back.

Tree rat would be a more appropriate description, I feel.
