Best way to cook salmon?

I'm planning on cooking some salmon fillets, which i would usually wrap in foil and put in the oven.

Oven aside for a change, can anyone recommend the best way to cook them? Just fancied trying something different.

Are a George Foreman grill or a griddle pan any good for salmon?

I know you didn't want to put it in the oven, but I would suggest seasoned and in the oven on a cedar plank then topped with sweet chili sauce in the last few mins of cooking. Serve still on the plank. The aroma of the hot cedar and the sweet chili flavour just go so well with the salmon.

Grill the salmon with some butter on the flesh. I wouldnt use a grddke pan as tge fish will just stick to the pan.

In the oven wrapped in foil with some butter in there

Bin it!
Smoked is ok.
Gravadlax fine,
But normal cooked salmon frown
That's my Saturday Kitchen hell!!

Marinate in sesame oil, soy sauce, garlic and ginger for an hour or so.

Flesh side down in a hot pan until browned, turn over and into a hot oven for 10 minutes.

Serve with a fennel salad dressed with lemon juice, olive oil* and some shavings of lemon zest over.

* Cold-pressed English rapeseed oil will do just as well, and is my preference

I've recently been poaching them in a court bouillon in the slow cooker. I use 50:50 white wine and water, whatever fresh herbs are convenient (bay leaf, sprig of thyme, bit of tarragon or dill) peppercorns, some vegetables (a bit of shallot or onion, carrot, fennel, celery, whatever I have) and a dash of white wine or cider vinegar or squeeze of lemon juice. Turn the slow cooker on to pre-heat, put everything else in a saucepan and bring to the boil, then pour it into the slow cooker. I then leave it in the slow cooker to infuse for as long as convenient - it's nice if there's time to let it sit for a while, but it's OK used immediately. Scoop the bits of veg out of the way, drop the fillets in, make sure they are submerged. Ten minutes should be plenty, less if you don't mind it a bit raw in the middle. Quite nice with a bit of dill chopped into creme fraiche and some steamed veg.

Cling film with salmon and butter in, microwave for two minutes.

Delicious, and it does not dry out like doing it on a griddle.

It is the only food I will microwave rather than use any other cooking method. Except scrambled eggs, of course biggrin

Morning all.
Double wrapped in foil, full hot cycle in the diswasher. Works a treat on salmon fillets.
Sadly, dishwasher doesn't get hot enough for 2 whole fish (as I found out at xmas) but the fillets in the dishwasher gives a very similar texture to sous-vide cooking.

Recommended!

Either sprinkled with lemon pepper and grilled on a george foreman or normal grill

or:

Wrapped in foil, dribble of olive oil, spring of rosemary, basil leaf, clove of garlic, squirt of lemon juice. Stuck in oven for 20 minutes at 180 degrees.

A foolproof method for a biggish piece or whole fish:

1. Measure the fish with a ruler at its thickest part
2. Turn on the oven as hot as it will go
3. Cook the fish (uncovered) for 10 minutes per inch of thickness

I've got a microwave fish steamer which I put salmon fillets in ( cod, haddock etc.)2 minutes on high and it's done smile
Also use the microwave for scrambled eggs biggrin with smoked salmon bits added for the last 10secs
