Holiday home trips - recommendations

Need some help; I'm looking to organise a 4/5 day lads long week/weekend at a holiday home somewhere in the south of UK.
Not done this before, so would like some expert advice on where to look and best places to look at.
What is essential is:
Outdoor activity (climbing/walking/biking etc)
Swimming pool
Spacious cottage/home/mansion (for up to 10)
Can someone point me in the right direction please? I've heard Wales is pretty good for this kind of thing; looking for a location where ideally the UK weather will be pretty decent (we are looking at the end of May to do this)
Budget is around the £700 - £1000 depending on number of nights/facilities.
